Why it's Low GI

Lean turkey breast is high in protein with almost no carbohydrate, and the beans add slow-digesting fibre in place of the usual breadcrumbs — so this meatloaf keeps you full without spiking blood sugar.

Method

Tap a step when it's done.

  1. Coarsely mince the turkey breast, or chop it into small pieces.
  2. Pulse the cooked beans briefly in a blender, leaving some texture.
  3. Chop the parsley and onion.
  4. Mix all the ingredients together thoroughly in a bowl.
  5. Press the mixture into a lightly oiled multicooker pot (or a lined loaf tin), smoothing the top.
  6. Cook on the "Baking" setting at 110°C for about 25 minutes, or bake at 180°C for 35–40 minutes, until cooked through.
  7. Rest, turn out carefully and garnish with fresh herbs before slicing.
