Turkey & Parsley Meatloaf

Why it's Low GI
Lean turkey breast is high in protein with almost no carbohydrate, and the beans add slow-digesting fibre in place of the usual breadcrumbs — so this meatloaf keeps you full without spiking blood sugar.
Method
Tap a step when it's done.
- Coarsely mince the turkey breast, or chop it into small pieces.
- Pulse the cooked beans briefly in a blender, leaving some texture.
- Chop the parsley and onion.
- Mix all the ingredients together thoroughly in a bowl.
- Press the mixture into a lightly oiled multicooker pot (or a lined loaf tin), smoothing the top.
- Cook on the "Baking" setting at 110°C for about 25 minutes, or bake at 180°C for 35–40 minutes, until cooked through.
- Rest, turn out carefully and garnish with fresh herbs before slicing.
