Summer Berry & Fruit Pie

Why it's Low GI
A cornmeal-and-oat base loaded with whatever summer berries and fruit you have — mostly fruit and fibre, sweetened only with stevia, good if you are watching your weight.
Method
Tap a step when it's done.
- Make a thick dough without the fruit. Set aside.
- While it swells, prepare the fruit: rinse the berries, slice any nectarine; mash the raspberries with a fork or blender.
- Press the dough into a 24 cm tin with a border. Fill with the fruit.
- Bake at 180°C for about 20 minutes.
- Cool before slicing.
