Strawberry & White Chocolate Tartlets

Why it's Low GI
A thrifty dessert that turns leftover sugar-free cake into tartlet shells, filled with a stevia-sweetened strawberry compote set with pectin. A small, low-sugar sweet bite.
Method
Tap a step when it's done.
- Preheat the oven to 180°C.
- Crumble the cooled cake (a moist cake needs no extra liquid).
- Press 2–3 tbsp of crumbs firmly into each cup of a non-stick tartlet tin to form shells.
- Bake 10 minutes, then cool.
- For the filling, heat the strawberries with the stevia and half the pectin on low until thickened.
- Fill the shells and top with melted white chocolate. Cool before serving for firmer shells.
