No-bake Strawberry Cheesecake

Why it's Low GI
A light quark cheesecake set with gelatine on a banana-granola base, topped with fresh strawberries — high in protein, with no added sugar beyond a little honey.
Method
Tap a step when it's done.
- Soak the gelatine in cold water until swollen.
- Mash the banana and granola with a fork and press into the base of a tin.
- Warm the gelatine in the microwave for 1 minute until dissolved.
- Blend the gelatine, quark, strawberries, honey and vanilla.
- Spread over the base and smooth.
- Decorate with chopped fruit and granola and chill about 1 hour.
