Why it's Low GI

A make-ahead parfait of protein-rich quark, granola and strawberries. Use plain quark and a sugar-free strawberry sauce to keep it low-GI — the granola and quark keep you full.

Method

Tap a step when it's done.

  1. Spoon a little granola into the bottom of a wide glass, then a layer of quark.
  2. Add another layer of granola and a layer of strawberries.
  3. Repeat the layers to the top.
  4. Finish with coconut shreds and a couple of prunes. Best made the evening before.
