Why it's Low GI

A lighter Easter kulich on coarse rye flour with dried fruit, ginger and anise — wholegrain and yeast-free, sweetened with stevia and the fruit.

Method

Tap a step when it's done.

  1. Heat the oven to 165°C and grease the moulds (about 11 cm).
  2. Sift the flour into a bowl; add the anise, salt, soda and ground ginger and mix.
  3. Add the dried fruit (chop the large pieces) and mix well.
  4. Stir the stevia into 150 ml of the reserved fruit water, then add the flaxseed meal and leave to swell.
  5. Pour the swollen flax mixture into the bowl, add the lemon juice and mix gently.
  6. Divide the dough between the moulds.
  7. Bake about 40 minutes, covering with foil for the last 10 minutes.
  8. Turn out and cool; decorate with coconut, dried fruit and honey if you like.
