Why it's Low GI

A showstopping no-bake layered cake built entirely from nuts, dates and fruit — no flour, eggs, butter or refined sugar. Cashew creams and coconut oil give richness while keeping it low-GI.

Method

Tap a step when it's done.

  1. Grind the walnuts and dates, mix in the coconut and press into the base of a 20 cm lined springform tin.
  2. Blend the chocolate cream ingredients until smooth; pour half over the base and freeze.
  3. Blend the strawberry cream; pour half over the chocolate layer and freeze 30 minutes (freeze the rest in a small square mould as a "gift").
  4. Add the second chocolate layer, freeze 30 minutes, then the final strawberry layer and freeze.
  5. For the fruit leather, blend the strawberries with honey, spread 2 mm thin on a tray and dry in a low oven or dehydrator.
  6. Cut a 20 cm circle of leather for the top; unmould the "gift" and set it on the cake, wrapping ribbon strips of leather around it.
  7. Blend the white cream, pipe on snowflakes and decorations, and keep chilled.
