Rabbit with Rosemary

Why it's Low GI
Lean rabbit is a light, low-fat protein; roasted slowly with vegetables and rosemary it makes a gentle, low-GI dinner — good for children and dietary eating.
Method
Tap a step when it's done.
- Lay the vegetables in the bottom of a dish.
- Pour over the salad juices and olive oil and add the rosemary.
- Roast at 180°C for about an hour, covered with foil so it stays tender — supper is ready.
