Why it's Low GI

A light set yogurt-and-pumpkin dessert, gently sweetened — protein from the Greek yogurt slows things down, with an isomalt caramel drizzle instead of sugar.

Method

Tap a step when it's done.

  1. Mix the yogurt with the pumpkin purée and sweetener.
  2. Dissolve the gelatine in ½ cup hot water.
  3. If lumpy, pass through a sieve.
  4. Pour into moulds and refrigerate overnight.
  5. Moisten the isomalt with water in a pan over high heat.
  6. Once the granules melt, lower to medium and cook until it darkens.
  7. Drizzle a fine thread over the panna cotta; to unmould, run hot water over the base.
