Pumpkin Panna Cotta

Why it's Low GI
A light set yogurt-and-pumpkin dessert, gently sweetened — protein from the Greek yogurt slows things down, with an isomalt caramel drizzle instead of sugar.
Method
Tap a step when it's done.
- Mix the yogurt with the pumpkin purée and sweetener.
- Dissolve the gelatine in ½ cup hot water.
- If lumpy, pass through a sieve.
- Pour into moulds and refrigerate overnight.
- Moisten the isomalt with water in a pan over high heat.
- Once the granules melt, lower to medium and cook until it darkens.
- Drizzle a fine thread over the panna cotta; to unmould, run hot water over the base.
