Halloween Pumpkin Muffins (Sugar-free)

Why it's Low GI
Pumpkin purée is low-calorie with a moderate GI. Wholegrain flour and erythritol keep the glycaemic impact low, while cinnamon and ginger support blood sugar regulation.
Method
Tap a step when it's done.
- Preheat oven to 180°C. Line a muffin tray with paper cases.
- Whisk together flour, spice mix and baking powder.
- Separately beat eggs, then add milk, pumpkin purée, sweetener, coconut oil and vanilla. Mix well.
- Pour wet into dry and stir until just combined — do not over-mix.
- Spoon into the cases, filling each about ¾ full.
- Bake 20–25 minutes until a skewer comes out clean.
- Cool in the tray for 5 minutes, then transfer to a wire rack.
