Oat Cookies with Coconut Sugar

Why it's Low GI
Coconut sugar has a lower GI than regular sugar (GI ~35 vs 70). Swap for erythritol with a few drops of stevia to reduce GI further. Coarse oats digest slowly, giving lasting energy.
Method
Tap a step when it's done.
- In a mixer, combine softened butter, egg and coconut sugar on low speed.
- Add all remaining ingredients. Use the paddle (not the blade) so the oats stay whole.
- Line a baking sheet with parchment. Preheat oven to 190°C.
- Refrigerate the dough 10 minutes. Roll into balls and flatten gently with the base of a glass.
- Bake 20 minutes until golden. Cool on the tray — cookies firm up as they cool.
