Why it's Low GI

A buttery flax-and-wholegrain pastry with a soft mushroom-and-potato filling — the flax adds fibre to steady the pastry’s carbs.

Method

Tap a step when it's done.

  1. Soften the butter; cook the mushrooms, potato and onion (a pressure cooker takes ~12 min).
  2. Make the pastry: mix the butter, flour, yolks, salt and vanilla; chill.
  3. Heat the oven to 160°C.
  4. Roll out the pastry, cut circles and press into silicone moulds; bake 25 minutes.
  5. Chop the mushrooms and potato; mix with fresh onion.
  6. Fill the tartlets and bake a further 15 minutes.
  7. Serve with the stock or a purée.
