Why it's Low GI

Protein-rich meatballs bound with flax and ground nuts instead of breadcrumbs — the mandarin segments add a little natural sweetness without moving blood sugar much.

Method

Tap a step when it's done.

  1. Heat the oven to 180°C.
  2. Finely chop the garlic and mix with the mince, herbs, flax and nut flour, and salt.
  3. Peel the mandarins and separate into segments.
  4. With wet hands, form small balls, place in a dish and tuck the mandarin segments between them.
  5. Bake for 10–15 minutes until cooked through.
