Flourless Meat & Potato Pie

Why it's Low GI
A flax-and-coconut-flour base instead of wheat means far fewer carbs, and the fibre-rich flax with a protein filling keeps blood sugar steadier than a pastry pie.
Method
Tap a step when it's done.
- For the base, mix the egg whites, flaxseed and coconut flour with dried garlic, salt and black pepper. Mix well.
- Prepare the filling: mix the mince with spices.
- Press the dough into a 10 cm tin, spreading it out evenly.
- Add sliced potato and the mince, and bake for about 15 minutes at 180°C.
- Top with the yogurt and scatter over chopped herbs. Turn out once cooled.

Tip
Flax pies are ideal if you want to keep carbs down — vary the filling however you like. Flaxseed flour is high in fibre.
