Why it's Low GI

A flax-and-coconut-flour base instead of wheat means far fewer carbs, and the fibre-rich flax with a protein filling keeps blood sugar steadier than a pastry pie.

Method

Tap a step when it's done.

  1. For the base, mix the egg whites, flaxseed and coconut flour with dried garlic, salt and black pepper. Mix well.
  2. Prepare the filling: mix the mince with spices.
  3. Press the dough into a 10 cm tin, spreading it out evenly.
  4. Add sliced potato and the mince, and bake for about 15 minutes at 180°C.
  5. Top with the yogurt and scatter over chopped herbs. Turn out once cooled.

Tip
