Lviv Cheesecake (Lvivsky Syrnyk)

Why it's Low GI
The base is cottage cheese — high protein, no flour. Coconut flour adds fibre. The chocolate glaze uses cocoa butter and minimal sugar rather than milk chocolate.
Method
Tap a step when it's done.
- Preheat oven to 190°C.
- In a mixer with the paddle, combine cottage cheese, eggs, 80 g sugar, vanilla and raisins. Don’t use the blade — you want texture, not a smooth cream.
- While mixing, gradually add coconut flour until you get a thick, sticky mass that holds its shape.
- Grease a tin and line with parchment.
- Transfer to the tin, smooth the top with a fork and bake for 20 minutes.
- Cool completely before glazing.
- Glaze: melt cocoa butter, then stir in sour cream, sugar and cocoa powder. Pour over immediately — it sets quickly.
- Refrigerate overnight. Slice in the morning.
