Lime & Almond Dessert (Sugar-free)

Why it's Low GI
Coconut and almond flour replace wheat, giving a low-carb, high-fibre base. Bananas provide natural sweetness; Truvia contains no sugar.
Method
Tap a step when it's done.
- Preheat oven to 180°C. Line a tin with parchment, lightly greased.
- Mix dry ingredients: coconut flour, cinnamon, baking soda, sea salt.
- Blend eggs, mashed bananas, coconut oil, vanilla and juice of 1 lime until smooth.
- Combine wet and dry. Pour into the tin and bake about 30 minutes.
- Topping: mix almond flour, sweetener, remaining lime juice and peanut butter. Gradually add Greek yogurt to a spreadable consistency.
- Trim the baked base if you like; crumble trimmings into the topping.
- Spread the yogurt-almond layer over the base.
- Scatter almond-peanut crumble on top. Cover and refrigerate — best served the next day.
