Flour-free Lemon & Thyme Cookies

Why it's Low GI
Made entirely with almond flour instead of wheat — naturally low in carbohydrates and high in protein and healthy fats. Sweetened with stevia, so no blood sugar spike.
Method
Tap a step when it's done.
- Mix all ingredients together until combined. Refrigerate the dough for 30 minutes.
- Preheat oven to 180°C fan. Line a baking tray with baking paper.
- Pinch off small pieces and roll into balls — the dough should hold its shape.
- Place on the paper and press a few thyme leaves gently into the top of each.
- Bake for 5–7 minutes until the edges are just lightly golden. Don’t overbake — they should stay slightly soft.
