Why it's Low GI

Made entirely with almond flour instead of wheat — naturally low in carbohydrates and high in protein and healthy fats. Sweetened with stevia, so no blood sugar spike.

Method

Tap a step when it's done.

  1. Mix all ingredients together until combined. Refrigerate the dough for 30 minutes.
  2. Preheat oven to 180°C fan. Line a baking tray with baking paper.
  3. Pinch off small pieces and roll into balls — the dough should hold its shape.
  4. Place on the paper and press a few thyme leaves gently into the top of each.
  5. Bake for 5–7 minutes until the edges are just lightly golden. Don’t overbake — they should stay slightly soft.
