No-bake Layered Curd Cake

Why it's Low GI
A no-bake, high-protein quark cake set in colourful natural layers — cocoa, blueberry and spirulina — sweetened with stevia and erythritol. Fun to make with children.
Method
Tap a step when it's done.
- Whip the quark on high with the sweeteners and vanilla in a processor.
- Divide into 3.
- Mix each part with its own ingredient (cocoa, berries, spirulina).
- Boil the gelatine/agar with water for 5–10 minutes, divide into 3 and add to each layer.
- Layer up in a tin and scatter with berries. Loosen with a little Greek yogurt to a thick-cream consistency if needed.
