Why it's Low GI

A kulich with no yeast, dairy or eggs — wholegrain flour and homemade nut milk, sweetened only with stevia and the natural sugars of dried fruit. Lower-GI than a classic sweet kulich.

Method

Tap a step when it's done.

  1. Preheat the oven to 165°C and grease the moulds.
  2. Sift the flour into a bowl and stir in the anise, salt, baking soda and stevia.
  3. Add the drained dried fruit and toss to coat in the flour.
  4. Pour in about 1.5 cups of nut milk and mix, adding more as needed.
  5. Stir in the lemon juice gently, then spoon straight into the moulds.
  6. Bake about 40 minutes, covering the tops with foil for the last 10 minutes. Cool before turning out.
