Yeast-free Easter Kulich

Why it's Low GI
A kulich with no yeast, dairy or eggs — wholegrain flour and homemade nut milk, sweetened only with stevia and the natural sugars of dried fruit. Lower-GI than a classic sweet kulich.
Method
Tap a step when it's done.
- Preheat the oven to 165°C and grease the moulds.
- Sift the flour into a bowl and stir in the anise, salt, baking soda and stevia.
- Add the drained dried fruit and toss to coat in the flour.
- Pour in about 1.5 cups of nut milk and mix, adding more as needed.
- Stir in the lemon juice gently, then spoon straight into the moulds.
- Bake about 40 minutes, covering the tops with foil for the last 10 minutes. Cool before turning out.
