Cranberry Curd Cake

Why it's Low GI
A high-protein quark cake on an oat-flake base, sweetened with stevia and studded with tart cranberries — protein and fibre keep blood sugar steady.
Method
Tap a step when it's done.
- Heat the oven to 180°C.
- Spread the flakes over the base of a tin, 0.5–0.7 cm deep.
- Mix the flakes with mashed banana into a thick dough.
- Form the base with wet hands and bake 10–15 minutes.
- Blend the quark, stevia, butter, eggs and cranberries in a processor.
- Spread the filling over the base and bake 15–20 minutes.
- Cool and decorate with fruit and nuts.
