No-bake Coffee-Chocolate Cheesecake

Why it's Low GI
A chilled quark cheesecake set with gelatine on a banana-granola base — high in protein, no refined sugar, with carob and coffee for a mocha note.
Method
Tap a step when it's done.
- Soak the gelatine in a little water.
- Mash the banana, mix with the granola, press into the base of a tin and chill.
- Warm the gelatine (microwave) and stir until fully dissolved.
- Blend the quark, sweetener, coffee, vanilla and gelatine until smooth.
- Set aside part of the mixture and blend with carob until smooth.
- Swirl the two together for a marble effect.
- Spread over the base and chill.
- For the glaze, mix the coconut oil, carob and stevia and pour over the set cheesecake (after 1–2 hours chilling).
- Use a springform tin; run a knife round the inside and let it set firm in the fridge.
