Why it's Low GI

A chilled quark cheesecake set with gelatine on a banana-granola base — high in protein, no refined sugar, with carob and coffee for a mocha note.

Method

Tap a step when it's done.

  1. Soak the gelatine in a little water.
  2. Mash the banana, mix with the granola, press into the base of a tin and chill.
  3. Warm the gelatine (microwave) and stir until fully dissolved.
  4. Blend the quark, sweetener, coffee, vanilla and gelatine until smooth.
  5. Set aside part of the mixture and blend with carob until smooth.
  6. Swirl the two together for a marble effect.
  7. Spread over the base and chill.
  8. For the glaze, mix the coconut oil, carob and stevia and pour over the set cheesecake (after 1–2 hours chilling).
  9. Use a springform tin; run a knife round the inside and let it set firm in the fridge.
