Why it's Low GI

A lighter cheesecake built on high-protein cottage cheese and coconut instead of heaps of sugar. Stevia sweetens it, and the coconut oil and cream give richness without a blood-sugar spike.

Method

Tap a step when it's done.

  1. Gradually mix the peanut butter with the flour to a firm, pliable dough — add a little more flour if it sticks.
  2. Roll or press the dough into a thin sheet on baking paper.
  3. Bake in a multicooker on "Oven"/"Multicook" at 150°C (or a 150°C oven) for 5–7 minutes, then cool.
  4. Mix the cottage cheese, coconut oil, coconut shreds, stevia and vanilla thoroughly by hand, not a blender.
  5. Crumble the cooled crust finely and moisten with 1–2 tbsp coconut cream.
  6. Using a small ring mould, layer crust crumbs and cheese mixture alternately.
  7. Top with berries, herbs, nuts or a little of the reserved crumb.
