Chocolate, Prune & Cottage Cheese Dessert

Why it's Low GI
A no-bake 'anything-in-the-cupboard' dessert — wholegrain bread soaked in carob, layered with a nutty cottage-cheese cream and prunes. Protein-rich, sweetened only by the prunes and stevia.
Method
Tap a step when it's done.
- Cut 4 slices of bread and trim the crusts.
- Dissolve the carob in water to a rich solution.
- Dip each slice fully.
- Lay on a plate.
- Blend the cottage cheese with the stevia and nut butter.
- Add a little curd mass for softness if needed.
- Blend the prunes with a little water.
- Spread a thick layer of the nut-cheese cream on the bread.
- Add a layer of prunes.
- Dust with carob through a sieve, and serve.
