Why it's Low GI

A no-bake 'anything-in-the-cupboard' dessert — wholegrain bread soaked in carob, layered with a nutty cottage-cheese cream and prunes. Protein-rich, sweetened only by the prunes and stevia.

Method

Tap a step when it's done.

  1. Cut 4 slices of bread and trim the crusts.
  2. Dissolve the carob in water to a rich solution.
  3. Dip each slice fully.
  4. Lay on a plate.
  5. Blend the cottage cheese with the stevia and nut butter.
  6. Add a little curd mass for softness if needed.
  7. Blend the prunes with a little water.
  8. Spread a thick layer of the nut-cheese cream on the bread.
  9. Add a layer of prunes.
  10. Dust with carob through a sieve, and serve.
