Low-Sugar Chocolate Ice Cream

Why it's Low GI
A low-sugar chocolate ice cream sweetened entirely with stevia (GI = 0) — no blood sugar spike. Rich, creamy and diabetic-friendly with just 2 g carbs per serving and no added sugar.
Method
Tap a step when it's done.
- Melt cocoa butter in a microwave on full power for 30–40 seconds. If pieces remain, leave 5 minutes to finish melting.
- Stir cocoa powder into the melted cocoa butter until completely smooth.
- Combine milk, butter, stevia and vanilla, then stir in the cocoa-butter mixture. Mix thoroughly.
- Pour into lolly moulds or small containers and freeze for at least 3 hours.
