Cherry & Chia Layer Cake

Why it's Low GI
An almond-and-oat sponge layered with a thick cherry-chia compote — tart cherries and chia add fibre, with only a touch of stevia; the white chocolate is a small finishing note.
Method
Tap a step when it's done.
- Heat the oven to 170°C.
- Blend all the sponge ingredients in a food processor.
- Transfer to a prepared tin and smooth.
- Bake about 25–35 minutes; cool completely.
- Heat the cherries with the stevia and half the pectin over low heat until thickened.
- Split the cooled sponge and cut three equal circles with a round cutter.
- Layer the circles with the cherry filling; top with coconut, prunes, nuts and a drizzle of white chocolate.
- Chill at least 2 hours (overnight is best).
