Why it's Low GI

Carrots and a little sweet potato blended with fresh coriander make a naturally sweet, warming soup — plenty of fibre keeps the rise in blood sugar gentle.

Method

Tap a step when it's done.

  1. Peel and roughly chop the carrots and sweet potatoes; chop the onion coarsely; peel the garlic.
  2. Bring 2 L water with a pinch of salt to the boil, add the vegetables and simmer for 30 minutes.
  3. Check the vegetables are soft; simmer another 10 minutes if needed, then set aside to cool a little.
  4. Prepare the coriander (remove tough stems, rinse), add to the vegetables and blend until completely smooth.

Tip
