Carob Chocolates (No Sugar, No Cocoa)

Why it's Low GI
Homemade chocolates from cocoa butter and carob — naturally sweet carob means no sugar and no cocoa needed, and no dairy. A clean treat you can flavour with nuts, spice or raisins.
Method
Tap a step when it's done.
- Melt the cocoa butter in a bain-marie or over very low heat.
- Stir in the spices.
- Off the heat, mix in the carob until the consistency of pourable cream.
- Stir through the nuts and raisins and pour into moulds.
- Refrigerate until hardened; store in a cool place.
