Buckwheat Cookies, No Sugar (Gluten-free)

Why it's Low GI
Buckwheat cookies with no sugar at all — sweetened with stevia, naturally gluten-free and low-GI, so a biscuit with tea stays filling rather than spiking.
Method
Tap a step when it's done.
- Mix all the ingredients except the flour.
- Blend half of the mixture until smooth.
- Mix everything again and add the flour.
- Heat the oven to 180°C. With your hands, form balls and flatten on a lined tray.
- Bake for 25 minutes, turning every 7–10 minutes to dry out.
- Leave in the cooling oven.
