Green Cream Soup (Broccoli & Spinach)

Why it's Low GI
Broccoli and spinach are non-starchy, low-GI vegetables packed with fibre. Steaming keeps their nutrients and colour, and a little cream and almonds add protein and fat that steady blood sugar.
Method
Tap a step when it's done.
- Rinse the broccoli and break into florets. Steam for about 20 minutes — steaming keeps the bright green colour.
- Add the spinach and steam for 1 minute more.
- Transfer the vegetables to a jug, season with salt and pepper, and blend with a stick blender, adding the cream and a little cooking water until smooth and creamy.
- Serve topped with roasted chopped almonds — sautéed mushrooms, prawns or a little salmon also work well.
