Why it's Low GI

Blueberries are one of the lowest-GI fruits and rich in antioxidants. Agar sets the jam without sugar and stevia sweetens it — so you get all the flavour with a fraction of the glycaemic load.

Method

Tap a step when it's done.

  1. Sort the blueberries, discarding twigs and damaged berries, then rinse and drain.
  2. Blend the berries with the stevia to a smooth purée; taste and adjust the sweetness.
  3. Transfer to a pan (or multicooker on "Baking"), bring to the boil, stir, then reduce to a gentle simmer.
  4. Dissolve the agar in a little hot water, stirring until fully dissolved.
  5. Stir the agar into the purée and simmer for 20–30 minutes.
  6. Pour into sterilised jars, seal and cool.
