Why it's Low GI

A two-fruit sorbet with no dairy and no added sugar beyond an optional spoon of honey. Blackberries and apple freeze into fine ice crystals, so it is light and refreshing with a modest glycaemic load.

Method

Tap a step when it's done.

  1. Cut the apple into small slices and freeze, along with the blackberries, for about 2 hours.
  2. Blend the frozen fruit, starting slowly and building up speed, in small batches.
  3. If it softens too much while blending, return it to the freezer for 30 minutes.
  4. Stir well before serving to give a dense mass of even ice crystals.
