Sugar-free Apple Pudding

Why it's Low GI
Inspired by English apple sponge — barely any batter, just enough to hold the fruit together, sweetened with erythritol so the apples do the work.
Method
Tap a step when it's done.
- Heat the oven to 180°C and grease a tin with a thin layer of oil.
- Mix all the batter ingredients (except the apples and fruit). Stir with a spoon first, then whisk.
- Let the batter rest to check it thickens; add a little water if needed. Cut the apples into pieces.
- Mix the apples with the erythritol (or honey / sweetener).
- Put the apples in the tin, pour over the batter and dust with cinnamon. Bake for 20 minutes.
- Decorate the pudding with berries, nuts or a little sour cream.
