Almond & Pecan Cookies (No Flour, No Sugar)

Why it's Low GI
Pure almond flour base with no refined sugar — sweetened only with erythritol. High in protein and healthy fats, low in carbohydrates. A reliable, fail-proof recipe.
Method
Tap a step when it's done.
- Zest half a lime and squeeze out the juice.
- Mix all ingredients together — the dough should be elastic and slightly moist.
- Preheat oven to 150°C and line a tray with baking paper.
- Scoop out dough and roll into balls. Press one pecan half into the centre of each.
- Bake for 10–12 minutes. They firm up as they cool — don’t worry if they seem soft in the oven.
