Beef Skewers with Red Wine Sauce

Why it's Low GI
Protein-rich beef with non-starchy vegetables keeps blood sugar stable. The sauce uses only a small amount of natural sweetener — swap honey for erythritol to keep GI minimal.
Method
Tap a step when it's done.
- Make the marinade: mix salt, honey/erythritol, chilli and cinnamon. Add 150 ml wine. Pour over the beef and marinate for 2 hours (or overnight).
- Preheat oven to 180°C fan (200°C without fan).
- Slice onion into rings and wash the tomatoes. Remove beef from marinade.
- Thread beef, onion and tomatoes alternately onto wooden skewers.
- Place on an oven rack and bake for 7–10 minutes until cooked through.
- Meanwhile make the sauce: melt butter in a small saucepan over low heat.
- Add flour and stir until lightly golden.
- Add 150 ml wine gradually, stirring as it comes to a gentle boil.
- Add balsamic vinegar, a pinch of cinnamon and chilli. Stir until slightly thickened.
- Pour sauce over skewers and serve immediately.

Tip
Replace honey with erythritol and wheat flour with almond flour to reduce the glycaemic impact of the sauce without changing the flavour.
